Recipe: Quick & Easy Orange Jelly
Yesterday I was revisiting my childhood with these fun looking orange jelly cups. Not something I would have every day but on a hot summer day a homemade jelly really hits a spot. If you’re entertaining, you could add a shot of vodka or two to the mix and a little extra gelatin for a grown up version of this paleo dessert. Remember, fruit juice does contain a fair amount of sugar, half of which is fructose, so skip your daily 1-2 pieces of fruit if you’re going to have two of these. Approximate sugar content per jelly cup is 4.5 grams.
Preparation notes: You can squeeze and strain your own orange juice or get good quality freshly squeezed orange juice from your local green grocer. You can use other berries instead of strawberries to achieve a similar visual affect.
- 120 ml hot water
- 10 gm gelatin powder (animal derived)
- 350 ml freshly squeezed orange juice, pulp free
- 4 large strawberries, thinly sliced
- 4 oranges, cut in halves
- Dissolve gelatin powder in hot water (I used almost boiling water). Add orange juice and mix through.
- Cut oranges in halves. Using a small knife, cut out the flesh carefully without cutting through the skin. You can use your fingers or a spoon to help. Discard the fruit flesh or use for juicing. Slice a thin layer off the bottom of orange halves to make them stand flat on a tray.
- Place 3-4 slices of strawberries in the orange halves and fill with orange jelly mix. Place the plate with oranges in the fridge, once the jelly firms up you can cover with gladwrap. Jelly will set in about 5 hours. Keep refrigerated for up to 3 days.
