Paleo Self-Saucing Chocolate Pudding

According to Emma and Carla of the Merrymaker Sisters, this gooey, saucy, chocolatey pudding is the best thing ever and will dazzle your taste buds, and having tried their desserts before, I certainly believe them.

I have made their salted caramel chocolate tart before (with HUGE success!), so I was really excited to try this recipe when I got a copy of their eBook Get Merry: A VERY Healthy CookbookIt’s such a lovely, delicious cookbook and the girls’ bubbly personality and laid-back approach shines through the 220+ pages covering gluten-free, grain-free and paleo recipes for breakfast, lunch and dinner, including their famous smoothies and desserts.

The girls served these puddings with coconut yoghurt and berries! But you can top them with all kinds of delish, whatever your heart desires.

Paleo Self-Saucing Chocolate Pudding

  • 1 egg whisked
  • ½ cup almond meal
  • ¹⁄₃ cup coconut milk (canned)
  • ¼ cup raw cacao powder
  • ¼ cup coconut oil
  • 2 tbs. honey or rice malt syrup
  • 1 tsp. 100% vanilla extract
  • ½ tsp. apple cider vinegar
  • ½ tsp. baking powder (gluten-free)


  • ¾ cup boiling water
  • ¼ cup raw cacao powder
  • 2 tbs. honey or rice malt syrup
  • 1 tsp. 100% vanilla extract


  1. Preheat oven to 180°C (350°F).
  2. In a mixing bowl combine all the pudding ingredients.
  3. Transfer the mix into 2 x 10 cm (4 inches) ramekins.
  4. In another bowl mix together all the chocolate sauce ingredients until super smooth.
  5. Carefully pour and divide the chocolate sauce evenly on top of each of the puddings.
  6. Place into the oven for 25 minutes. Check and see if it’s cooked, let cool for a couple of minutes (if you can) then eat it all up!
