Saucy, gooey, chocolate self-saucing pudding desserts are insanely good and easy. It’s a paleo, grain-free, sugar-free recipe from Get Merry Cookbook.

FOR PALEO PUDDINGS
- 1 egg whisked
- ½ cup almond meal
- ¹⁄₃ cup coconut milk (canned, full-fat)
- ¼ cup raw cacao powder
- 2 tbsp coconut oil
- 2 tbsp honey or rice malt syrup
- 1 tsp 100% vanilla extract
- ½ tsp apple cider vinegar
- ½ tsp baking powder (gluten-free)
FOR THE CHOCOLATE SAUCE
- ¾ cup boiling water
- ¼ cup raw cacao powder
- 2 tbsp honey or rice malt syrup
- 1 tsp 100% vanilla extract
Instructions
- Preheat oven to 180°C (350°F).
- In a mixing bowl combine all the pudding ingredients.
- Transfer the mix into 2 x 10 cm (4 inches) ramekins.
- In another bowl mix together all the chocolate sauce ingredients until super smooth.
- Carefully pour and divide the chocolate sauce evenly on top of each of the puddings.
- Place into the oven for 25 minutes. Check and see if it’s cooked, let cool for a couple of minutes (if you can) then eat it all up!
